Apple Crisp Mini Cheesecakes are individual fall desserts that combine a buttery graham cracker crust, creamy cheesecake filling, spiced apples, and a crunchy oat streusel topping. They bake in under 30 minutes and are perfect for gatherings or cozy nights in.

Ingredients

  • 3/4 cup graham cracker crumbs
  • 1 1/2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, melted
  • 10 ounces cream cheese, softened
  • 6 tablespoons sugar
  • 1 1/2 teaspoons vanilla extract
  • 2 teaspoons all-purpose flour
  • 1 large egg
  • 2 medium Golden Delicious apples, finely chopped
  • 2 teaspoons freshly squeezed lemon juice
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons light brown sugar
  • 1 1/2 teaspoons cornstarch
  • 1/3 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 1/3 cup quick-cooking oats
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg
  • 2 1/2 tablespoons unsalted butter, melted
  • Caramel sauce for serving (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Line a standard 12-cup muffin tin with paper liners.
  2. Mix graham cracker crumbs, sugar, and cinnamon. Stir in melted butter. Press about 2 tablespoons of the mixture into each liner and refrigerate.
  3. Combine flour, brown sugar, oats, cinnamon, and nutmeg for the streusel. Stir in melted butter until crumbly. Chill until ready to use.
  4. In a bowl, beat cream cheese until smooth. Add sugar, vanilla, and flour; mix until combined. Add egg and mix just until incorporated.
  5. Toss chopped apples with lemon juice, cinnamon, nutmeg, brown sugar, and cornstarch until coated.
  6. Spoon cheesecake filling over the crusts, filling each about two-thirds full. Top with apple mixture, gently pressing down. Sprinkle generously with streusel topping.
  7. Bake for 30 minutes, or until centers are slightly jiggly and edges are set.
  8. Cool in pan for 30 minutes, then refrigerate for at least 2 hours before serving.
  9. Drizzle with caramel sauce just before serving, if desired.

Notes

  • Use Golden Delicious apples for best texture and sweetness.
  • Do not overmix the batter after adding the egg to prevent cracking.
  • Keep streusel chilled before baking for a better crumble.
