Ingredients

  • 1 1/2 cups salted butter, at room temperature
  • 1 1/4 cups packed light brown sugar
  • 1 tablespoon pure vanilla extract
  • 2 large eggs, at room temperature
  • 4 1/2 cups all-purpose flour, plus more as needed
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/8 teaspoon finely ground black pepper
  • 1 cup salted butter, at room temperature (for frosting)
  • 3 ounces cream cheese, at room temperature
  • 2 cups powdered sugar
  • 1/3 cup real maple syrup
  • 1 teaspoon vanilla extract
  • Optional: melted white chocolate for dipping
  • Optional chai sugar: 1/3 cup granulated sugar, 2 teaspoons cinnamon, 1/2 teaspoon ginger, 1/2 teaspoon allspice, 1/2 teaspoon cardamom, 1/4 teaspoon cloves

Instructions

  1. In a large mixing bowl, cream together butter, brown sugar, and vanilla until light and fluffy (3–5 minutes).
  2. Add eggs one at a time, mixing until fully combined.
  3. Add flour, baking soda, cinnamon, ginger, cardamom, allspice, nutmeg, salt, and black pepper. Mix until a dough forms.
  4. Divide dough in half, flatten into disks, and roll out on a floured surface to 1/4-inch thickness.
  5. Cut cookies with desired cookie cutters and place on parchment-lined baking sheets.
  6. Freeze trays of cut cookies for 20 minutes until firm.
  7. Preheat oven to 350°F. Bake cookies for 12 minutes until lightly golden. Let cool on tray for 5 minutes, then transfer to a wire rack to cool completely.
  8. Brown 1 stick of butter in a skillet over medium heat until it smells nutty (about 3 minutes). Cool to room temperature.
  9. In a bowl, beat browned butter, remaining butter, cream cheese, powdered sugar, maple syrup, and vanilla until light and fluffy.
  10. Spread frosting on half of the cookies. Top with another cookie to form sandwiches.
  11. Optional: Dip top cookies in melted white chocolate and sprinkle with chai sugar.
