English Muffin Breakfast Pizzas are a quick and satisfying breakfast or brunch option made with toasted English muffins topped with scrambled eggs, bacon, chili sauce, and melted cheese. These mini pizzas are kid-friendly, freezer-friendly, and ready in just 30 minutes.

Ingredients

  • 8 large eggs
  • 1/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon onion powder
  • 3/4 cup real bacon bits, divided
  • 6 English muffins, sliced in half
  • 1/2 cup Heinz chili sauce
  • 1 1/2 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Crack 8 eggs into a medium mixing bowl and add 1/4 cup heavy cream. Whisk until fully beaten.
  3. Add 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1 teaspoon onion powder. Whisk again until combined.
  4. Heat a non-stick skillet over medium heat and pour in the egg mixture. Stir gently until eggs are just set and no longer wet.
  5. Stir in 1/2 cup of bacon bits and remove pan from heat.
  6. Slice 6 English muffins in half and place them cut side up on a baking sheet.
  7. Spread each muffin half with a thin layer of Heinz chili sauce.
  8. Spoon the egg and bacon mixture evenly onto each muffin half.
  9. Top with shredded cheese and sprinkle remaining 1/4 cup bacon bits over the top.
  10. Bake in the oven at 400°F for 8–10 minutes, or until cheese is melted and bubbly.
  11. Serve immediately.
