Bright green, chewy drop sugar cookies inspired by the classic holiday Grinch story. These cookies are easy to make in one bowl with no chilling required and finished with a red heart sprinkle for a festive touch.

Ingredients

  • 1 stick (4 ounces/113g) unsalted butter, melted
  • 2/3 cup granulated sugar, plus extra for rolling
  • 2 large egg yolks (no egg whites)
  • 1 teaspoon vanilla extract
  • 3–5 drops green gel food coloring
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine salt
  • 12 red heart sprinkles

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper or a silicone mat.
  2. Melt the butter in a mixing bowl, then stir in the granulated sugar, egg yolks, vanilla extract, and green food coloring until fully combined.
  3. Sprinkle in the flour, baking soda, and salt. Stir until the dough is fully mixed and no dry streaks remain.
  4. Flatten the dough in the bowl and divide it in half. Scoop 6 dough balls from each half to make 12 total.
  5. Roll each dough ball in extra granulated sugar until coated.
  6. Place the dough balls on the prepared baking sheet, spacing them evenly.
  7. Bake for 11 minutes, or until the cookies puff up and appear dry and crackled on top.
  8. Immediately after baking, press one red heart sprinkle into the center of each warm cookie.
  9. Let the cookies cool on the pan for 2 minutes, then transfer to a wire rack to cool completely.

Notes

  • If using salted butter, omit the added salt.
  • Use parchment paper instead of a silicone mat for more pronounced cookie crinkles.
  • Dough can be frozen into balls and baked from frozen with an extra 1–2 minutes of bake time.
  • Fully baked cookies can be frozen and defrosted at room temperature.
  • Gel food coloring provides more vibrant color than liquid.
