Ingredients

  • 4 large flour tortillas
  • 1 cup diced ham
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped (optional)
  • 2 tablespoons butter or oil
  • Salt and pepper, to taste

Instructions

  1. Gather all ingredients and chop the ham and green onions.
  2. In a skillet over medium heat, melt 1 tablespoon of butter.
  3. Whisk the eggs until fluffy, then pour them into the skillet and cook gently for about two minutes until just set.
