A hearty and flavorful one-pan dinner featuring roasted sweet potatoes, broccoli, and juicy sausage slices coated in a sweet and savory honey garlic sauce. Perfect for busy weeknights or meal prep, this dish comes together quickly with minimal cleanup.

Ingredients

  • 14 oz chicken or turkey sausage, cut into 1/2-inch slices
  • 2 medium sweet potatoes, cut into 1/2-inch cubes
  • 2 cups broccoli, cut into 1/2-inch florets
  • 1 tablespoon unsalted butter
  • 4 medium cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • 2 tablespoons minced fresh parsley

Instructions

  1. Preheat oven to 400°F (204°C). Lightly grease a large sheet pan.
  2. Add sausage, sweet potatoes, and broccoli to the sheet pan and spread in a single layer.
  3. In a medium skillet over medium heat, melt butter. Add minced garlic and sauté for 1–2 minutes until fragrant and lightly golden.
  4. Add honey, soy sauce, and apple cider vinegar to the skillet. Bring to a simmer and cook for 3–5 minutes, stirring occasionally, until slightly thickened.
  5. Pour the honey garlic sauce over the sausage and vegetables. Toss to coat evenly and season with salt and pepper to taste.
  6. Roast in the oven for 25–30 minutes until vegetables are tender and sausage is browned at the edges.
  7. Top with fresh parsley and serve warm.

Notes

  • For a vegetarian version, skip the sausage and add extra vegetables such as mushrooms or zucchini.
  • Store leftovers in the refrigerator for up to 6 days.
  • To reheat, microwave individual servings for 1–2 minutes or warm in a skillet.
  • Make the sauce up to 1 week ahead and refrigerate.
  • Use tamari instead of soy sauce for a gluten-free option.
