Ingredients

  • 3 large sweet potatoes, peeled and chopped into 1-inch chunks
  • 1/2 cup honey, divided
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cinnamon
  • Salt, to taste (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, toss the chopped sweet potatoes with 1/2 cup honey and 2 tablespoons olive oil until fully coated.
