Honey sesame chicken is a crispy, juicy fried chicken dish tossed in a thick, sweet-savory sauce made with honey, soy sauce, and garlic. This Chinese-American favorite is a satisfying homemade alternative to takeout with bold flavor and satisfying texture.

Ingredients

  • 1½ lb chicken breast or thighs, cut into 1-inch pieces
  • 1 tsp chicken bouillon powder
  • ½ tsp white pepper
  • 1 tbsp water
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • 2 tsp baking powder
  • ½ tsp salt
  • ¼ cup water
  • 2 tsp vegetable oil
  • 3 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 2 tbsp rice vinegar
  • 2 tbsp ketchup
  • ¼ cup honey
  • 3 tbsp brown sugar
  • 3 tbsp water
  • 4 cloves garlic, minced
  • 1 tbsp sesame oil
  • 2 tsp cornstarch (for slurry)
  • 3 tbsp water (for slurry)
  • Toasted sesame seeds, for garnish
  • Sliced green onions, for garnish
  • Vegetable oil, for frying

Instructions

  1. In a bowl, mix chicken with bouillon powder, white pepper, and 1 tbsp water. Marinate for at least 10 minutes.
  2. In a separate bowl, mix soy sauce, oyster sauce, rice vinegar, ketchup, honey, brown sugar, and 3 tbsp water. Set aside.
  3. In a mixing bowl, whisk together eggs, flour, cornstarch, baking powder, salt, ¼ cup water, and 2 tsp oil. Pour over chicken and mix until evenly coated.
  4. Heat 2–3 inches of vegetable oil in a heavy-bottomed pot to 365°F. Fry chicken in batches for 3 minutes. Drain on a wire rack.
  5. Increase oil temperature to 375°F. Double fry chicken in batches for 2 minutes or until golden and crispy. Drain on wire rack.
  6. In a wok, heat 1 tsp oil over medium. Sauté garlic for 30 seconds. Add sauce and bring to simmer for 2 minutes.
  7. Mix 2 tsp cornstarch with 3 tbsp water and add to the sauce. Cook for 1 minute until thickened. Turn off heat and stir in sesame oil.
  8. Toss fried chicken in the sauce until fully coated. Garnish with sesame seeds and green onions before serving.

Notes

  • Double frying makes the chicken extra crispy and prevents it from getting soggy in the sauce.
  • Add 1 tsp dark soy sauce for deeper color and richer flavor.
  • For a spicier version, include chili oil or red pepper flakes in the sauce.
  • Chicken thighs provide juicier texture, while breasts are leaner.
  • Use a thermometer to maintain oil temperature for best results.
