Ingredients
125g butter, melted
1/3 cup caster sugar
2 eggs
1 tsp vanilla essence
2 ½ cups plain flour
1 tsp baking powder
1 cup icing sugar
3 tsp water
Marshmallows (for snowman heads)
Mini M&Ms (for buttons)
Icing pens (black and pink, for faces and arms)
Instructions
In a large bowl, whisk together melted butter, caster sugar, eggs, and vanilla essence until well combined.
Stir in the plain flour and baking powder until a soft dough forms. Knead gently to bring it together.
Wrap the dough in plastic wrap and freeze for 30 minutes to firm up (optional for easier handling).
Preheat oven to 200°C (or 180°C fan-forced) and line two baking trays with parchment paper.
Roll out the dough on a floured surface to about ½ cm thick. Use the rim of a glass (approx. 9cm) to cut circles.
Place dough circles on prepared trays and bake for 8 minutes or until golden. Let them cool completely.
Draw snowman faces on marshmallows using icing pens and set aside.
Mix 1 cup icing sugar with 3 tsp water to form a smooth, runny icing. Spread on each biscuit to create a melted look.
Press marshmallow heads onto the icing and place 3 mini M&Ms as buttons. Let set.
Use the black icing pen to draw arms. Let the decorations harden before serving.
Notes
You can use store-bought biscuits if you’re short on time.
Try using pretzel sticks for arms for added crunch and fun.
Add food coloring to the icing for a unique twist.
Store undecorated biscuits in an airtight container for up to 3 days before decorating.
