One Pot Lasagna Soup is a hearty, comforting soup that combines all the classic flavors of lasagna—ground beef, tomato, noodles, and creamy cheese—into a rich, one-pot meal. It’s perfect for busy nights when you crave lasagna but want minimal prep and cleanup. Creamy, savory, and topped with ricotta, this soup is a family favorite for cold evenings.

Ingredients

  • 1 lb ground beef
  • 3 garlic cloves, minced
  • 1/2 yellow onion, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 tsp kosher salt, plus more to taste
  • Fresh ground pepper, to taste
  • 14 oz can crushed tomatoes
  • 32 oz chicken broth, plus more if needed
  • 1 cup water
  • 2 tsp tomato paste
  • 6 oz lasagna noodles, broken into small pieces
  • 1 cup frozen spinach
  • 1/4 cup heavy cream
  • Ricotta cheese, for serving
  • 4 oz mozzarella cheese, sliced
  • Optional: Parmesan cheese, for topping

Instructions

  1. Brown the ground beef in a large pot over medium heat and drain off the excess grease.
  2. Add the minced garlic, chopped onion, garlic powder, onion powder, dried basil, dried oregano, salt, and pepper. Cook for 5 minutes until onions are softened.
  3. Add the crushed tomatoes, chicken broth, water, tomato paste, and broken lasagna noodles. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 10 minutes or until the noodles are nearly cooked.
  5. Add the frozen spinach and heavy cream. Simmer an additional 5 minutes.
  6. Place a slice of mozzarella cheese at the bottom of each serving bowl, ladle soup over the cheese, then top with a dollop of ricotta and a sprinkle of parmesan if desired. Serve hot.

Notes

  • This soup is intended to be thicker, like a stew. Add extra chicken broth at the end if you prefer a thinner consistency.
  • You can substitute ground turkey or sausage for ground beef.
  • For a vegetarian version, use plant-based ground and vegetable broth.
  • Add fresh basil for garnish if desired.
