A refreshing non-alcoholic mojito made with fresh pineapple, coconut water, lime juice, and mint, topped with sparkling water for a fizzy tropical twist. Perfect for warm-weather gatherings or as a vibrant alternative to traditional cocktails.

Ingredients

  • 1 cup fresh pineapple chunks
  • 1/2 cup coconut water
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup simple syrup (adjust to taste)
  • 1/4 cup fresh mint leaves, plus extra for garnish
  • Sparkling water or club soda
  • Ice cubes
  • Lime wedges for garnish

Instructions

  1. In a glass or cocktail shaker, muddle the fresh pineapple chunks with fresh mint leaves to release their flavors.
  2. Add the coconut water, lime juice, and simple syrup to the muddled mixture. Stir well to combine.
  3. Fill a serving glass with ice cubes.
  4. Pour the mixture over the ice.
  5. Top with sparkling water or club soda.
  6. Garnish with additional mint leaves and lime wedges.
  7. Serve immediately and enjoy.

Notes

  • Use frozen pineapple if fresh is unavailable; thaw before using.
  • Maple syrup or agave can substitute simple syrup for a natural sweetener.
  • Coconut milk may be used instead of coconut water for a creamier version.
  • For a large batch, multiply ingredients and mix in a pitcher; add sparkling water just before serving.
