Cold, creamy, and packed with zesty flavor, Rotel Ranch Dip is a no-cook appetizer perfect for summer parties, lake days, or casual gatherings. It combines softened cream cheese, sour cream, Rotel tomatoes, ranch seasoning, and shredded cheddar for an irresistibly scoopable dip.

Ingredients

  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 can (10 oz) Rotel tomatoes with green chilies, drained
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 2 tablespoons chopped cilantro or parsley (optional)
  • 1/4 cup diced red bell pepper or jalapeño (optional)

Instructions

  1. Let the cream cheese soften at room temperature for 30 minutes.
  2. In a large bowl, combine the softened cream cheese and sour cream. Mix until smooth using a hand mixer or sturdy spoon.
  3. Drain the Rotel tomatoes thoroughly using a fine mesh strainer, pressing out excess liquid.
  4. Add the drained Rotel to the bowl and stir gently to combine.
  5. Mix in the shredded cheddar cheese and ranch seasoning until evenly incorporated.
  6. Fold in chopped cilantro, parsley, bell pepper, or jalapeño, if using.
  7. Cover and refrigerate for at least 1 hour to let flavors meld and the dip firm up.
  8. Stir before serving and serve chilled with chips, crackers, or vegetables.
