A rich and creamy one-pot soup made with spicy Italian sausage, cheese tortellini, sweet potatoes, and spinach, perfect for cozy weeknight dinners. This comforting dish brings together bold flavors and hearty ingredients in a velvety broth.

Ingredients

  • 12 oz spicy Italian sausage
  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika (regular or smoked)
  • 1 large sweet potato, peeled and cubed
  • 5 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 6 cups water
  • 8 oz three-cheese tortellini (refrigerated)
  • 4 oz fresh spinach
  • 1/2 cup heavy cream
  • 4 tablespoons fresh thyme
  • Salt to taste

Instructions

  1. Heat olive oil in a large, high-sided pot over medium heat. Add crumbled sausage and cook until browned.
  2. Sprinkle in Italian seasoning and paprika. Stir well.
  3. Add sweet potato, garlic, red pepper flakes, and tomato paste. Stir to combine.
  4. Pour in water and bring to a boil. Reduce heat to a simmer, cover, and cook for 15 minutes until sweet potatoes are tender.
  5. Add tortellini to the pot, cover, and simmer for 10 minutes.
  6. Stir in fresh spinach until wilted.
  7. Remove from heat and add heavy cream. Stir gently.
  8. Season with salt and additional red pepper flakes if desired. Garnish with fresh thyme before serving.

Notes

  • Use sweet or mild sausage if you prefer less heat.
  • Add tortellini at the end to avoid overcooking.
  • To freeze, do not add cream until reheating.
  • Use coconut milk for a dairy-free version.
  • Gnocchi, ravioli, or agnolotti can be used instead of tortellini.
