Ingredients

  • 4 cups pecan halves
  • 1 large egg white
  • 2 teaspoons vanilla extract
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup water
  • Non-stick cooking spray

Instructions

  1. In a large mixing bowl, whisk together the egg white and vanilla extract until frothy (about 1–2 minutes).
  2. Add the pecan halves and stir until they are evenly coated.
  3. In a separate bowl, combine the granulated sugar, brown sugar, and cinnamon.
  4. Pour the sugar mixture over the pecans and toss until well coated.
  5. Spray the inside of a slow cooker with non-stick cooking spray and add the pecans.
  6. Cover and cook on low for 3 hours, stirring every 30 minutes.
  7. Stir in the water during the last 30 minutes of cooking.
  8. Spread the cooked pecans on a parchment-lined baking sheet and let cool for 30 minutes.

Notes

  • Use a 6-quart slow cooker for best results.
  • Line the baking sheet with parchment paper to prevent sticking.
  • Allow pecans to cool completely for maximum crunchiness.
  • Try substituting pecans with almonds, walnuts, or cashews.
  • Add 1/4 teaspoon cayenne pepper for a spicy-sweet variation.
