Southern Sweet Potato Casserole

Southern Sweet Potato Casserole is a comforting dish that combines creamy mashed sweet potatoes with a crunchy pecan topping and gooey marshmallows. It’s a perfect blend of sweet and savory flavors, making it a beloved dish for holidays and family dinners.

Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 1 cup light brown sugar
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1 cup mini marshmallows
  • 1 cup chopped pecans
  • 4 tbsp unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the sweet potatoes in salted water for 15-20 minutes, or until fork-tender. Drain well.
  3. Transfer the sweet potatoes to a mixing bowl and mash them until smooth and creamy.
  4. Add the brown sugar, cinnamon, eggs, and a pinch of salt to the mashed sweet potatoes, and mix until well combined.
  5. In a separate bowl, combine the chopped pecans with melted butter and additional brown sugar (if desired).
  6. Grease a baking dish, then spread the mashed sweet potato mixture evenly in the dish.
  7. Top the sweet potato mixture with mini marshmallows, then sprinkle the pecan mixture over the top.
  8. Bake for 25-30 minutes, or until golden brown on top and the marshmallows have melted into a gooey layer.

Notes

  • For a healthier variation, substitute brown sugar with maple syrup or honey.
  • If you prefer less sweetness, omit the marshmallows and just use the pecan topping.
  • To achieve a golden finish, broil for a minute at the end of baking.
  • Leftovers can be stored in an airtight container in the fridge for up to 5 days.
