A hearty and comforting breakfast casserole made with layers of hot breakfast sausage, crispy tater tots, melty cheddar and mozzarella cheese, and a rich, seasoned egg mixture. Perfect for make-ahead brunches, holidays, or feeding a hungry crowd any time of day.

Ingredients

  • 2 lb hot breakfast sausage
  • 1 (30–32 oz) bag frozen tater tots
  • 1½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 8 large eggs
  • 2 cups milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder

Instructions

  1. Preheat oven to 350ºF (175ºC) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, cook the sausage over medium heat until no longer pink. Drain excess fat.
  3. In a large mixing bowl, combine the frozen tater tots, cooked sausage, cheddar cheese, and mozzarella cheese. Spread evenly into the prepared baking dish.
  4. In a separate bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder until fully combined.
  5. Pour the egg mixture evenly over the tater tot and sausage mixture.
  6. Bake uncovered for 70 minutes, or until the eggs are set and the top is golden brown.
  7. Let the casserole rest for 5–10 minutes before serving.

Notes

  • No need to thaw the tater tots before assembling.
  • Can be made ahead and refrigerated overnight before baking.
  • To freeze: assemble, wrap tightly, and freeze unbaked for up to 3 months. Thaw overnight before baking.
  • Reheat leftovers in a 350ºF oven for 30–40 minutes covered with foil.
  • Mini tater tots can add extra crunch.
