Thanksgiving Carrots

Thanksgiving Carrots are a vibrant and flavorful holiday side dish, roasted with olive oil, honey, herbs, and citrus zest. They offer a perfect balance of sweetness and earthiness that complements traditional Thanksgiving meals.

Ingredients

  • 1 pound baby carrots, trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon orange zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 fresh sage leaves, for garnish

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss the trimmed baby carrots with olive oil, honey, salt, and pepper until evenly coated.
  3. Add chopped thyme, rosemary, and orange zest. Mix well to distribute the flavors.
  4. Spread the carrots in a single layer on a parchment-lined baking sheet, ensuring they are not overcrowded.
  5. Roast for 20–25 minutes, turning halfway through, until carrots are golden and tender.
  6. Remove from oven and transfer to a serving dish. Garnish with fresh sage leaves and serve warm.

Notes

  • Add minced garlic to the olive oil mixture for extra depth.
  • Substitute honey with maple syrup or agave nectar for different sweetness profiles.
  • Add chopped nuts like pecans or walnuts before roasting for a crunchy texture.
  • Drizzle with balsamic glaze or citrus juice after roasting for added brightness.
