This Ultimate Green Bean Casserole is a comforting twist on a classic holiday side dish, enhanced with crispy bacon, sautéed mushrooms, and creamy Monterey Jack cheese. It delivers a perfect balance of savory flavors and textures for festive gatherings or cozy dinners.

Ingredients

  • 6 strips bacon
  • 1/2 yellow onion, finely diced
  • 1 1/2 cups chopped white button mushrooms
  • 3 cloves garlic, minced
  • 2 (10.5 oz) cans cream of mushroom soup
  • 1/4 cup whole milk
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper, to taste
  • 4 (14.5 oz) cans cut green beans, drained
  • 1 1/2 cups French fried onions

Instructions

  1. Preheat the oven to 350°F and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large skillet, cook the bacon over medium-low heat until crisp. Remove and drain on paper towels, then crumble.
  3. Drain all but 2 tablespoons of bacon grease from the skillet. Return to medium heat and sauté the onions for about 5 minutes or until translucent.
  4. Add mushrooms and cook for another 5 minutes or until golden brown.
  5. Add garlic and cook for 1 minute, until fragrant.
  6. Stir in the cream of mushroom soup and crumbled bacon. Mix well.
  7. Stir in the milk and Monterey Jack cheese until the cheese is melted.
  8. Add salt and pepper to taste. Fold in the drained green beans until evenly coated.
  9. Transfer the mixture to the prepared baking dish and top with French fried onions.
  10. Bake uncovered for 30 minutes or until hot and bubbly.

Notes

  • Use baby bella mushrooms as a substitute for white button mushrooms for deeper flavor.
  • Heavy cream can be used instead of milk for a richer consistency.
  • Fresh or frozen green beans can be used if blanched before mixing.
  • Assemble the casserole a day in advance, but add fried onions just before baking to retain crispiness.
