A creamy, sweet, and savory appetizer made with whipped goat cheese topped with a warm mixture of caramelized dates, crispy bacon, shallots, and fried rosemary. Served with toasted bread or crackers, it’s the perfect elegant starter for holidays or gatherings.

Ingredients

  • 6 oz raw bacon slices
  • 12 oz crumbled goat cheese, at room temperature
  • 1/2 cup Greek yogurt
  • 4 tbsp honey, divided
  • 2 tbsp olive oil, plus more for drizzling
  • 1 tbsp water
  • 1/4 tsp kosher salt
  • Freshly cracked black pepper, to taste
  • 2 sprigs fresh rosemary
  • 2 large shallots, thinly sliced
  • 12 Medjool dates, pitted and roughly chopped (about 6 oz)
  • 2 tbsp apple cider vinegar
  • Toasted bread or crackers, for serving

Instructions

  1. Preheat the oven to 400°F. Lay the bacon in an even layer in a 12-inch cast-iron skillet and bake for 25 minutes or until crisp.
  2. In a food processor, combine goat cheese, Greek yogurt, 2 tablespoons of honey, olive oil, water, salt, and black pepper. Process until smooth, scraping down the sides as needed.
  3. Spoon the whipped goat cheese onto a large plate or into a shallow bowl and set aside.
  4. Transfer the cooked bacon to a paper towel-lined plate to drain, keeping the drippings in the skillet.
  5. Place the skillet over medium heat and add rosemary sprigs. Fry until crisp on both sides, then remove and drain.
  6. Add shallots to the skillet and cook until caramelized and tender.
  7. Stir in the chopped dates, apple cider vinegar, and remaining 2 tablespoons of honey. Simmer for about 1 minute until the mixture is sticky and reduced.
  8. Spoon the warm date mixture over the whipped goat cheese.
  9. Crumble the bacon and rosemary leaves over the top.
  10. Drizzle with additional olive oil and a few cracks of black pepper. Serve with toasted bread or crackers.
